By all means go in August! I think all of the sights are open, pretty much as usual, but you can find out for sure in your guidebook and on this websight. As for restaurants, many are closed for all or part of August but a number of the well-known brasseries (e.g. Bofinger) and some other restaurants stay open. I believe Le Fontaine de Mars and Les Bookinistes, two we have enjoyed, are open in August.

August is great in Paris! Just make sure you reserve a hotel with air conditioning. A bistro we have enjoyed very much is "Christine" on Rue Christine in the 6th. It is across the street from the famous Rotisserie En Face, which is also quite good, and open in August.
Have a wonderful time.

Twenty years ago, much was closed in Paris in August - not true today. A few restaurants and small shops will take their annual holiday, but all in all, I doubt you'll notice anything unusual. If you have your heart set on making reservations at certain restaurants, though, it would be wise to check in advance if they will be open.

My only trip (so far) to Paris was in August. I stayed in the Latin Quarter did not notice things to be closed up at all. Maybe if you have a high-end famous restaurant in mind (or like that) you might find it closed for their own vacation?

We were in Paris last August and found that one famous ice cream shop (the name escapes me) was closed. Otherwise, we had zero problems. It was terribly hot if you remember the heat wave all over Europe. Our hotel was airconditioned, in the latin quarter and very convienent. We also found a small grocery that sold frozen bottles of water and our room had a fridge in it. This might be blasphemy but we also went to several MacDonalds since they sold 'maxi' sized drinks and had ice available.
