You are surely aware that the Xmas/New Year period is perhaps the most expensive. In fact this period generally lasts until January 6 which is Epiphany.
My suggestion would be to fly into London and do New Year's Eve there taking in the fireworks display on the Thames.
I like the idea of Amsterdam and would suggest arriving by train. First on the Eurostar under the Channel and then changing at Lille for Amsterdam.
There is a direct flight from Amsterdam to Chambéry Airport which is the nearest main airport to Courcheval. Returning there are direct flights to London Gatwick with a regular bus connection to London Heathrow.
Amsterdam could be bitterly cold but if you are going skiing you will obviously have warm clothing.
