Spain or Greece with Turkey with kids

Turkey and Greece are neighbouring countries, so it makes more sense to me to combine these two countries.
You don't mention anything about the reasons that cause confusion... when you intend to travel and what your likes are....

How many whole days to you actually have on the ground, not counting travel days?
If only 7, stay in one country.
Even with 10, there is more than enough to do in any of these countries.
When are you going?
Were you planning on any of the Greek Islands?
What are your interests?
Since you would probably fly from country to country or to Islands anyway, I don't think their proximity is much of a consideration in this case. The consideration is they are just too much regardless.
Without knowing more, I would lean towards Spain because you can do and see so much in a short time and not use so much time traveling about with kids.
