I just looked at all the little restaurants, sat at a cafe and people watched and then went to a lemoncello factory with free samples. I was only there for one night. We had spent the day in Capri.
Sometimes it's nice just to relax and look around.

There's a tourist magazine available for free in most hotels. It includes a good walking tour of Sorrento with some interesting historical info. Depending on how easily distracted you are by things you see while you're walking the tour, you could probably finish it in a half day.
There's also usually a theater/music hall show of Italian folk songs or something similar. I don't know if tickets for this would be needed in advance, but I would think your hotel (even in another town) would be able to help you with this.

Go down to the Grande Marina, which is actually the small marina. It is very typical of a small fishing village, there's a restaurant right on the pier, can't think of the name right now, but it's the only one. It was great food and great sunset.

There is nothing in Sorrento. Perhaps take the circumvesuviana to Ercolano and walk the ruins there - very different from Pompeii. You can take the same train to Naples and visit the National Museum, remarkable, and then get pizza at one of the two joints, da Michele or Trianon near the train station. All the cab drivers know them. In the evening you can hop the circumvesuviana and go for pizza in Vico Equense (a few minutes on the train) and eat at Gigino - a huge place and a real experience. Check out the massive pizza ovens. Also, at Torre del Greco, there is a cameo factory where we usually take our groups. I forget if this is on the train line, but the hotel clerk will know.
