Great thread and worth reviving. If I may add a few:

Galicia-Noia, Muxia (Costa da Morte) and Islas Cies

Central-Arevalo, Cuenca (or is that too well known?)

Love this thread, glad to see it come back!

Last year we started our Camino at the the little village of O'Cebreiro in Galicia. For anybody thinking of doing a "short" Camino, I would recommend starting here, such a quaint place, with its unusual "pallozas" (round stone houses with thatched roofs). We stayed at an old Monastery which is now a hotel, San Giraldo de Aurillac, dating from IX century. Next to it is the sweet church Santa Maria la Real, which is supposed to be the oldest church associated with the Camino.
