Our plan is to take the AVE from Madrid to Sevilla, spend 1-2 days there and then rent a car.
My question is about the order of driving.
Should we drive Sevilla-Arcos-Ronda-Granada-Sevilla or is there a better order?

The order you have indicated is fine. You don't indicate why you are returning to Sevilla. If you have time, spend at least 3 days in Sevilla, then drive via Arcos and Ronda to Granada.

The reason we are returning is to Sevilla is to catch a flight to Barcelona.

I think the order sounds right. We went to Spain last year and rented a car in Sevilla. We drove from there to Arcos to Ronda to Granada (and then onto Toledo).

Have you looked in to traveling from Madrid to Granada and then Ronda, Arcos and Sevilla so you don't have to backtrack. I am not at all sure how easy it is to go from Madrid to Granada.
