Be careful what route(s) you choose to get in and out of Cahors - there's plenty of really steep gorges with sheer dropoffs on some roads into/out of that town. Since my favorite route has been clogged with construction every time I've gone through there in the past few years, I can't advise you which ones to avoid except to say that check that map!
BTW, there is a distinct difference between a squiggly road and a squiggly river on any Michelin map I've ever owned. What problem are you having distinguishing them? And be SURE never to take a road that is a series of dashes/hyphens on any Michelin map - those are the truly frightening ones!
I'm not understanding why you'd use public transportation to get to Ste-Marie-de-la-Mère. I'd actually scratch that from your list and replace it with AIgues-Mortes, anyway, but driving through the Camargue is delightful. Same with Nîmes - not sure why you'd use public transportation to go there when you're using a car to get plenty of other similar places.
