Schiphol Layover Time

I'm looking at flights going from the US to Edinburgh and vice versa with layovers in Amsterdam. I've flown through Schiphol many times and have found it to be one of the best organized large airports, but I'm wondering if the short layovers proposed are actually doable.

All flights would be booked all the way through on one ticket and operated by KLM. One option has layovers of 1 hour (coming) and 1 hour 50 minutes (going). My other options are flights with 6 and 8 hour layovers.

I've read previous threads about this likely being enough time (1 hour may be dicey, but 1 hr 50 minutes seems fine); I'm just wondering if anything has changed due to COVID in the past couple of years. This travel would be in May 2022.
