We absolutley loved Restaurant Anticipation several years ago, and thought it even better last September. Here's the Fodor's review with the address and phone number, don't know about May 1 tho.
Light, creative dishes using the region's famed specialties (such as poulet de Bresse) are carefully prepared here by John Rosiak, a former cook at Georges Blanc. The homey feel makes it a place where you can settle in for an evening of good fare and fun. AE, MC, V. Closed Mon. No dinner Sun.
Address: 8 rue Chavanne, Presqu'île, Lyon, France

Robjame, I'd suggest trying La Maison Villemanzy for your May 1 dinner (. Their weekly closing day is Sunday, not Monday so they *should* be open. You'll be able to get a taxi there - just ask the hotel. Although the food isn't as high a standard as le Caro de Lyon, it's still pretty good - and you'll never forget the view
Or, if you want a real splurge, try La Tour Rose (www.tour-rose.com). It's within walking distance of your hotel and is renowned as one of the city's top restaurants (also a luxury hotel). The cuisine is lovely (I'll admit to finding it very rich, however) and the setting is stunning, in a beautiful renaissance building in the heart of the old town. It's not usually closed on Mondays, so there's a chance it'll be open on May 1.
I'll have another think for some other alternatives...
