We had our first (and one of the best) dinners at Nimmos/Ard Bia in Galway. It's in a charming old cottage on the water, at the end of Shop Street. Food was delicious and staff delightful. Yes, we are foodies. Sorry, we did not stay in Cork; stayed in Kinsale, which was lovely.
Here's a link for Nimmos: http://ardbia.com/restaurant/

In Galway, suggest you have high tea at the venerable (1845)Great Southern Hotel (Hotel Meyrick)...overlooking Eyre Square...an elegant experience. And above suggested Nimmo's is excellent for dinners.

Cafe Paradiso, Lancaster Quay, Cork: http://www.cafeparadiso.ie/.
The only vegetarian restaurant I know where the majority of customers seem to be carnivores who are seeking good and interesting food.

You will love Galway! I have been 5 times and it is just a great town. My favorite restaurants are Morans Oyster cottage which is a few miles out of town. For a nice dinner in Galway try The Malt House. and my absolute favorite place is McDonoughs. You can do sit down or take away. The most amazing fish and chips and oysters I have ever had!
