I agree with Mariosa's suggestion of St.Remy/Glanum. You may also be able to bus to Les Baux from there. St. Remy has an abundance of good restaurants/cafes/bistros.
If you are really energetic, there is a hiking trail that leads from Glanum to Les Baux (I think it is the GR6). This is several miles in length but well worth it if your in to hiking.

The Astoria, the Mimosas, the Eden, and the Juan Beach are all listed in the Michelin guide, which means they should be okay. All four are in your price range.
You could also do a search for discount hotel sites for Provence and the Riviera--there are quite a few.
