Sushi isn't prevalent in Prague. Prague is not known for fresh sushi made from fish pulled straight from the Vltava.

I shared the activities I like to do in Prague in winter on your other, related, post. I also shared restaurant suggestions in your preferred category. "Open to anything" is terribly broad. I enjoy Zimne Nogi (jellied pig knuckles) every once in a while but would not necessarily offer up Prague restaurants offering the dish. On the flip side, I despise Quark, which others apparently love.
As the previous poster stated, guidebooks and the Internet will offer you more "Top 10" lists than you probably have time to parse.
