I know that checkpoint well, if it's still just north of Tombstone.

Actually, it was a bit further West on lonesome AZ Hwy 83 near Sonoita. When we came back from a trip to Tombstone, Bisbee, Coronado NM, and the scenic gravel road W of Coronado that runs parallel to the US/MX border to Parker Canyon Lake.

According to the Italians, it's no longer necessary to stamp passports, because they scan them and the date of entry will show up if the exit control officer also scans them. I'm not sure they even scan them, but I can't be sure. I have an Italian passport, so I don't have any restrictions on entry.

If there is any record kept of entry and exit electronically, it's likely to be only within the same country such as Italy or neighbouring states, such as France and Germany. So if you enter Schengen in Italy and leave from the Netherlands, Dutch official will be unable to confirm your entry without a stamp. Schengen Information Systems, both SIS 1 and SIS 2, only issue alerts entered by a member state about fugitives on the run, those banned from entry etc, and have no capacity to track everyone's movement in and out of the area. The IT system needed to do that across all Schengen member states hasn't been developed and it will be too costly and complicated to implement it.

Had the same when leaving US long ago. Was questioned for some time. It ended when I told the officer I was not responsible if his colleagues didn't do their job. He was not pleased though.
Same bureaucracy everywhere.

Passport control rarely stops to stamp my passport when I first enter Europe, but I usually ask them to do it anyway. They alternately look border or annoyed, but I like to have the stamps as a souvenir. Never thought they'd actually be useful since it's been me asking them to do so.

We had the same problem last year when we flew into Rome and home from Zurich - no entry stamp in Rome meant concerns in Zurich. We had to provide our own proof of entry.

As I have said before, the border officials in Switzerland, Germany and Netherlands are among those well known for being sticklers for rules and likely to scrutinise your passport. Italy is getting stricter because of migrant crisis, and security concerns have made everyone more assiduous in checking documents.
