SSander - most if not all of the list you are quoting are market streets, not a roving market. You can enter the street name into a mapping tool and get all the info you need.

Chosing between rue M and rue C is a no brainer. Rue Mouffetard wins in a walk. But you do have to get to the south end between Place de la Contrescarpe and St. Médard church to enjoy it. The Place d.l. Contrescarpe is a unique hangout in the evenings but it requires some uphill walking.
On the other hand, let me propose the market at Place Maubert. I used to live in that neighborhood and bought my veggies there. Wine, meat, and cheese shops are on the Place Maubert or nearby. I don't know what days it is open. I doubt that you'll find any tourists there. This is a real outdoor market in the heart of the Latin Quarter. The Place Maubert is on Blvd. Saint Germain just 500 meters east of Blvd. Saint Michel.
One of my favorite cafes is still Café du Metro on the north side of Place Maubert. Last year I had lunch there -- a Croque Madame and a glass of wine for € 12.20. It has a south facing patio so the sunny relax was included.

Rue Mouffetard begins setting up around 9 a.m. so don't go to early. We stayed just south of there in February and I was disappointed in the market in the mornings. Probably by 10am it would be fine.
