Many experts believe that oysters should not be eaten in months that don't contain the letter "r." That means May, June, July and August. European oysters are edible in summer months, but they reproduce during these months, giving them a flaccid, skinny look, and sometimes an unpleasant gritty taste. Avoiding oysters in summer gives them the chance to reproduce, thus ensuring that oysters will live for another season.

Looks like mighty big oysters to me! Enjoy!
During the warmer months, the weekend crowd spills onto the street near the Marché d’Aligre (a great place to shop for groceries pre- or post- wine). On Sunday afternoons, it’s all about the oysters. From late morning through about 4pm, friends convene, sipping rosé and sucking down bivalves to their hearts’ content. It gets crowded, but the small space seems to expand in order to accommodate all.

There is a place near ST Germain that serves nothing but Oyster and prehaps one othe shellfish . I can't think of the name just this minute, I'll check my lists and post it later. Do not expect to have them cooked here they serve only raw

Also most of the larger restaurants like Le Wepler, Procope,
Le Train Bleu, and Brasserie Bofinger (they have displays of seafood on huge slabs of ice right outside the restaurant).
At Bofinger I saw a man shucking oysters at this display.

Le Bar a Huitres specializes in them, there is one near where I stay in Montparnasse

I'm not a big oyster fan so don't know where is best. I think they are middle range in terms of quality, but not bad (Bar a huitres). Most brasseries serve them, maybe all do. That's one of their big things
