Nuremberg for Vegetarian

I'm in the beginning stages of planning a trip in December 2014 with my adult daughter who is a vegetarian. I'm not too familiar with German food - other than the wonderful wursts that I love. Any feedback on restaurants in Nuremburg that may offer non-meat or fish entrees? Thanks,

Most every place will have SOMEthing vegetarian, even if it is only one item that might seem a bit token, but there are nice online compendia/reviews of more dedicated vegetarian/vegan restaurants:

Salads in Germany are always good. They just come with their house dressing most of the time. Spaetzle with cheese. Potato dumplings. Nuremburg sausages are so so so good.

Being Vegetarian as well as Vegan in Germany is extremely popular. You should have no trouble at all finding great food. She might have to order ala carte, but there will always be vegetarian options on menus.

Ideas:
Flammkuchen with spinach and sheeps cheese
Pfifferlingen mushroom risotto or on spätzle
Other mushrooms sauces on various noodles
Arabiata Sauce on pasta
Pesto
Salads
Pizza with spinach or tuna or just vegatarian
Eggplant and zucchini dishes
Potato dishes
Veggie burgers
Nut loafs
Egg dishes
Broccoli, Cabbage, Wirsing, Brussel Sprouts, Cauliflower, Leeks
Pumpkin is very popular and used in all kinds of ways, from soups, to ravioli, etc.

Think ethnic too. Turkish with Falafel, Indian, Italian, Asian
