While you don't need to book a timed ticket in advance, at most times of the year, it avoids having to queue (sometimes for hours). Some hotels can order tickets for you. For Uffizi there are no tickets available for online sale for your dates. Call telephone booking centre +39 (0)55 294883 which is open from Monday to Friday from 8.30am to 6.30pm and on Saturdays from 8.30 to 12.30 (local Italian time).

We were in Florence 2 weeks ago without reserved tickets to either and found the lines to be tolerable late in the afternoon. One day we spent about ten minutes in line for the Uffizi, the next about a half hour for the Accademia. I wouldn't sweat it, you will get in regardless.

Definitely call the number that Alec gives. The website showed sold out for the date I wanted 7/14 but I was able to pretty much get the times I wanted on that date by calling. They will give you a confirmation number for each museum and you pay in cash when you arrive.
