You might want to check out Grand Circle Tours; I have been eyeing this tour as the price is very good and there's a lot of free time. Not going next year (chose Malta) but will probably go the following year. Have been to Thailand with GC and they do a terrific job. Please don't be put off with the idea its a "senior" tour (unless you are in your twenties). Age range on my tour was 50 to whatever. Nobody was an "old goat!"

Paul Laifer tours is well-known for that area. Best time of year? I don't know, I've only been there in May (Prague, Krakow) and July (Budapest). May was very nice and less crowded with tourists than the summer (although those places all do have a lot of tourists now, even in spring)

We are scheduled to leave for Warsaw, Krakow and Prague on October 21st. Paul Laifer Tours arranged the trip for us, but it is not an escorted tour. We were originally scheduled to depart shortly after the flooding in Prague, and they were very accommodating about changing the trip. So far, they have been very helpful and easy to deal with. I will let you know if I still feel this way after we return.

You haven't said what kind of a budget you have set for your trip, but I would recommend Isram: http://www.isram.com. Prague and Budapest are their specialty, and their prices are quite reasonable. If you can afford it, you cannot do better than to go with Tauck World Discovery: http://www.tauck.com. These tours run from April to October, but the Prague, especially, is extremely popular during the summer months, so the shoulder season would be best.
