When we flew out of Montpellier a few years ago, we actually stayed in Aigues Mortes. It's a short & easy drive to the airport.

If you look up hotels for Lattes on ViaMichelin, you'll get the array for that immediate area. We stayed at Le Mas de Couran before flying out because I didn't want to stay at a chain. It was nice enough but felt overpriced after what we'd paid for hotels elsewhere on that trip. (Albi, Coullioure, Ceret) We did get a triple and the room was pretty spacious, with a view over the garden. I think the place would feel much nicer in season. (We were there in early Spring.) The restaurant looked good and smelled better. Lots of customers. But, we were tired of spending so much money. (It always happens on the longer trips!) So, we drove to a nearby shopping center to experience the French interpretation of an American style restaurant. Had a great time. Drive to the airport in the am was no more than ten minutes.
