You cannot see the entire island in a daytrip from Messina. Your best bet is to go to Taormina.

How much time do you have?
Earthquakes and WWII have made the city less than appealing,
but if you are a Caravaggio aficionado, the Museo Regionale has two paintings on display by this master.
We had a nice lunch at Piero several years ago on a daytrip

Most cruise ships offer the half day excursion to Taormina. DH and I did that. the down side was we went in the morning and were back at the ship by noon, when most everything in Messina closed for siesta. We walked around the town a bit - there was a cathedral and such that we checked out. We ended up back on the ship and DH did laundry and I went to the spa. I do recall another excursion to the beach....I think a driver is a good idea, someone who can take you around the environs.
