Well, Provence and southern Spain are going to be warmer than northern Europe, but it won't be hot and sunny (if that's what you're looking for). I've been in Corsica, Aix-en-Provence and Barcelona in late March and found the weather to be unsettled. It rained for part of the trip and generally I needed a long sleeved shirt and spring jacket to keep warm. If you're looking for "tshirt weather", Seville, southern Italy and Greece might be a little warmer.

We were in Provence late April last year. Most days were sunny, started out quite cool but would warm up to at least mid 70's. Some nights would get down into low 50's and high 40's. I have to think that March would be pretty cool...but I like it like that! No doubt southern Spain would be warmer. Depends on what you and your kids like to do = quite frankly I don't think your kids would enjoy Provence as much as they would the southern coast of Spain.
