Madrid to Porto?
Hello,
I will be flying into and out of Madrid in May and plan to spend several days in Portugal. We don't want to rent a car for the entire time, and it's outrageously expensive to rent one in Spain and return it in Portugal. I also don't want to spend an entire day on a bus, so is the night train from Madrid to Lisbon my only option? Or is there a day train where we could enjoy the scenery?

For geographic and political reasons getting from one country to another on the peninsula is not especially easy. Too much blood spilled etc.
Train to Porto is 9 hours
Bus is more like 14 hours during the day see Flixbus

Timetable:
Madrid dp 16.00 by train ARC 4165 - Vigo ar 20.12. .
Vigo dp by Flixbus 20.40 - Porto ar 22.00.
You may also spend the night at Vigo and leave the morning after at 8.58 by train to Porto ar 10.20
or
Madrid dp 8.00 by train ARC 4095 - Vigo ar 12.26. .
Vigo dp by Flixbus 13.50 - Porto ar 15.05.
