I've traveled with my husband and daughter on several trips. Booking.com is a good resource to start your search because they allow you to choose 3 adults and what bed configuration you want. You know your budget, so you can also input that. When you see something interesting, read reviews on other sites and look for trip reports on neighborhoods.
If you have a few top choices, people here may be able to help you choose.

I've just been watching an episode of the Hotel Inspector on the telly, and heard her mention the Qbic Hotel, v.close to Aldgate East tube Station...
https://qbichotels.com/london-city/
I've never heard of it, excellent reviews on TA.....well worth a peek.

Park Plaza Westminster Bridge Hotel

We stayed here with our granddaughter and it was perfect.
We had a room with a sitting room that had a sofa that opened into a bed. The bathroom jutted out between the 2 spaces which provided privacy. Both sides had their own TV which the GD liked.
The breakfast was excellent and the location let us walk to many sites.
