My husband falls within the same category as yours, although he has tried to slow down.
I wouldn't go early to eat dinner - no one is there before 8pm, and THAT's BORING. At first we ate all alone in the restaurants, before we figured it out. People watching is half the fun. Usually, by the second half of the vacation, we are so overly sated, we don't eat large meals in the evenings; we learn to pace ourselves.
We were in Pisa during the Luminaria, and the restaurants were PACKED -there were no tables anywhere. We followed some teenagers into a little grocery store (salumeria?); they showed us the bakery around the corner where they had bought their bread (even at 10PM!) and then brought it to the meat counter; they had him make up sandwiches for them. We bought some wine to go with our sandwiches, sat on some church steps overlooking a large piazza, and watched all the young and old lovers and families doing their passegiata (evening stroll). Very enjoyable.

Ciao4now--what a great idea to make a picnic! I've already highlighted all the parks that I'd like for us to see (Pincio, Trastevere, Adventine) and we could enjoy nature, people watching, and food. We'll probably end up with a nice balance of restaurant meals and picnics, especially since we'll be staying in an apartment. I'll be able to keep deli food refrigerated. As you can guess, I can't wait!

You guys are making me hungry! And nostalgic. I love holidays in Italy! You will too, dln, I promise!! Throw a few coins in that fountain for me, and drink in all the pleasures, gastronomical and otherwise, of Roma!
