Oh yikes! OK, no problemo, immimi, but then my original question still stands:
Our car rental confirmation talks about returning the car to Fiumincino Airport and it says "Desk in Terminal". What does that mean? Does that mean in the terminal building where the flights are? Or the building where you return the car?

Before you drive the car off the lot in Arezzo you should ask the desk clerk in the rental office to show you how to put the car in reverse. Not all stick shifts in Europe are the same. Likewise where to find the headlights, windshield wipers, etc etc
A taxi from the Hilton to Fiumincino proper will be short but it will be expensive due to local pricing which allows those drivers to charge a premium for going in and out of the airport. It is rather too far to walk, but you might ask the hotel desk if there is another option like an easy bus or shuttle.
You might want to call AutoEurope & ask them if you can extend your drop-off time by an hour or two. That would give you time for a leisurely lunch. Civitella d'Agliano or Civita Castellano are interesting places to stop en route.

I just realised you are staying at the Hilton Garden Inn rather than the Hilton that is right at the airport. I would recommend switching to the airport location. Unless you are hauling tons of luggage, you can walk to and from the terminals if you stay right at the airport, rather than rely on shuttles, and you will be closer to the town of Fiumicino for a seafood dinner. Presumably you still get the points at the airport Hilton.
Wanted to add another possibility for your last full day in Italy, which is enjoy a nice seafood lunch instead of a seafood dinner, either at Pinzimonio or somewhere along the coast en route to the airport area (in Santa Marinella or, if you really want to splash out, eat at Cesar at the La Posta Vechhia hotel in Ladispoli, which used to be a private mansion owned by the Gettys.

If I did a grand seaside lunch, I would bring some light food & wine from Toscana and simply stay at the hotel for dinner.
To make a seaside lunch work, would probably be best to re-schedule your car rental drop off unless you want to drop it off around 11am and then taxi to a restaurant.

Elizabeth, good, that's exactly what we did.
massimop, I thought the Hilton Garden Inn WAS right at the airport but I'm going to check to make sure it's got an airport shuttle. If not, I may move us to a closer Hilton. As far as what we're going to do on our last day in Italy, I think I'll just take all your excellent information with me and make a decision that last week. La Posta Vecchia looks gorgeous though and I'm more inclined to stop for lunch than go out again for dinner. I do like the idea of bringing a little in-the-room picnic with us for dinner.
Many thanks to everyone for such great help!
