Italy Itinerary - too much or just right (hotel info included)

Italy Itinerary - too much or just right (hotel info included)
Hi- my husband and i are going to Italy from May 27-June 6. He's been there before, my first time. Planned itinerary is as follows:
Arrive Rome morning of 27th. Stay until Saturday (2 nights at the Eden)
Leave Sat 29th for Florence/Siena area. Do bike tour Sunday leave Monday. So stay 2 nights, 1.3 days
(no hotel yet- suggestions?)
Monday leave for Venice for 2 nights, 2-3days, head to CT Wed.(plan to stay at hotel Colombina)Venice will be half of Monday, all day Tuesday, part of Wed.
CT arrive Wed afternoon, Thurs, Fri night (Villa Steno)
(So about 2.5 days, but 3 nights)
Leave Sat back to Rome and depart Rome Sunday.
I'm more interested in the local food, hikes, exploring than I am the major tourist attractions, although of course we will see those too.
Any other ideas - places to stay longer or less or not go to altogether?
All travel is by train - so on those travel days I am taking away half the day at least for travel.

Skip Siena and spend your time (really just Saturday afternoon) in Florence. You are hitting the big 3 plus 5 Terre. Many will say this is too busy but you can do it.
Preferably I'd add a night to each city to experience it a little more and not be exhausted and save Cinque Terre for another trip, maybe tie it in with a week in smaller towns in Tuscany another time.

Your itinerary looks packed to me.
I'll give you my take on train travel. I always take the train in late afternoon (after 5pm or so). That way, I can maximize my sightseeing time without "wasting" a whole morning traveling on the train. Obviously, I only do that when I already have a hotel reservation at my destination town.

My take on train travel is exactly the opposite of yk's.
I like to get up and out, reaching the next city and hotel in time to check in and have lunch. Then I have the entire afternoon to reorient and get the feel of the new place, as well as see a site or two before nightfall.

You seems to be doing a bit of backtracking and it seems like a long time in the CT.
I loved the Hotel Villa Steno- and check out my trip report from last summer, I've got restaurant recommendations.
Hotel in Siena: Villa Piccola Siena
+ 39 0577 588044- it's on the outskirts of town but what a gem! Walking into town is easy and the bus to town picks you up out front.

I loved Piccolo Hotel Oliveto in Siena, just outside the Porta Romana gate on the south side of town, and I plan to stay there again next month. Alexandra and Antonio are wonderful hosts!! Lovely countryside views, breakfast with the cost of the room, and a place to park your car, a plus for Siena.

That is a long time in CT, unless you're looking to chill out and do nothing--it's pretty, but how many hours can you take to just look at pretty coastline on a short trip? Bit of an odd balance with essentially less than 2 days in Venice and 2.5 in CT.
