It covers a lot of ground. Going to Portovenere is a nice bonus. So I would guess they drive you to Riomaggiore and give you tickets to take the train all the way up to Monterosso, with a stop in Vernazza.
Then take the ferry one way to Portovenere and from there, you get on the coach to return to Florence.
Or they do it in the reverse order.
The ferry is nice, if you board at Monterosso, you'd be able to see all of the villages from the sea. If you board at Riomaggiore to Portovenere, it's still scenic but you wouldn't go by the other CT villages.
If you HAVE to see the CT, it's not a bad option, if you can withstand a 13-hour day trip, with about 5 hours in that coach.
But you could also check that site or Viator for shorter trips from Florence, which would include places like Siena, Chianti, San Gimignano, etc. There won't be water views like the CT though.

One thing I would add.
I would try not to book this trip until the latest you can wait, so you know the weather will be good.
Of course you risk that the tour will sell out on the dates that you can go.
But if you book too far in advance, you won't know what the weather will be like on that day.
Lot of these tours, you can't cancel if within a few days of the tour but you can book tours that will let you use an electronic voucher or the email confirmation you get, that you can show from your phone.
So you don't even need a printer but you could book a couple of days before you want to go when you're actually in Florence and can check the weather forecast for the day when you want to go.
Viator and Getyourguide have electronic vouchers and also apps, at least for the iPhone.
