I'm having a hard time finding which day is Market Day in some Alsace towns
At some point in my research, I saw that Colmar, Kayserberg, etc. had market days on specific days of the week. Now I can't find that info at all, even on the tourism websites. Is there an easy way to find this out?

Try "Colmar Markt."
I got the following sight:

A lot of times that information is on the city's website, not just the tourist office website, or instead of that, because it is for local residents, also.
The Colmar tourist office website has that information
http://www.ot-colmar.fr/index.php
Just go to the section called "events and visits" and then there is a subheading for exhibitions, fairs and markets, and you can then search in a drop-down list for type of market (ie, marche hebdomadaire for weekly market, puces and brocantes, etc.).
FOr Kaysersberg, it's on the city website
http://www.ville-kaysersberg.fr
Go to "vie pratique" and then choose "les marches" at the left side.
There are special sites for Christmas markets in Alsace, but I assume you aren't looking for those. This is one of those
