How to do Provence in the second week of July?

Because many shops are closed then - except villages where they rely on tourism as their major source of income - like Gordes, Roussillon, Les Baux, and St Remy (latter will have some places closed on Monday). Villages which have their market day on Sunday will have shops open - like l'Isle sur la Sorgue - but shops will be closed on Monday. Bedoin has a very nice market on Monday. I would not visit Arles, Avignon, Aix, or Nimes on Sunday or Monday when shops are closed - unless you just want to just visit museums & churches or have a nice long French Sunday lunch.

We'll probably visit the market at l'Isle sur la Sorgue, not more I think, may do this on a Sunday as it's market day there.. I'm trying to keep the lavender route for as late in our stay as possible since we're there from June 13-23, a little early in the season.
One other question, my sister would like to take a cooking class, she did a few in Tuscany some years back and loved the experience. Do you have any suggestions for Provence? Or would it be better in Bourgogne, we're there the first week of July.
