I would take the Stansted Express train from the airport to Tottenham Hale where you can change to the tube and take the Victoria Line directly to Victoria station. Then Gatwick Express and a cab from the airport to the hotel.
Alternatively there might be a coach service from Stansted to Gatwick, which would be useful if you have a lot of luggage. But I don't know about coach services so you'll need to rely on other Fodorite's for that info.

The least painful way is to get the bus to Gatwick airport then get the hotel shuttle.
For bus details - and all details of access to, and between, Heathrow, Stansted and Gatwick - go to the BAA site
For shuttle details go to the Thistle Hotels site

Take flanner's suggestion - it would be the least complicated, and cheapest way.
Unfortunately a car service (like the Eddie Manning Rex suggests) would be very expensive because Stansted and LGW are on opposite sides of London - Stanstead 30 miles north and LGW 30 miles south.
