Hotel in Eze, France?

DH and I will be spending 10 nights in Nice, from May 1-11. The apartment is already rented. Last time we were in Nice, we took a day trip to Eze and only were there for a few hours, but I was smitten. I would like to spend a night in Eze but not sure where to stay. I definitely want to be in the old part of town that is high up and has the cobblestone streets. I love villages like that. I'm not sure what the area is called and looking at different hotels, I haven't a clue where they actually are. Has anyone spent any time in Eze and know the areas or has a hotel recommendation? I would rather not spend more than $250 for the night since we are also paying for an apartment for that night. Thanks in advance for any recommendations/advice you may have.

Only accommodation I know of that is in the village is Chateau Eza, with only 14 rooms, some fair number of which are suites. Did not check rates but I am sure they would be well over $250/night.

In 2006, we stayed at Arc en Ciel. At the time it was 60 euros a night! It was simple but perfect

There is also the Chateau de Chevre d'Or, but is beyond your budget. THere is another hotel (La Villa d'Eze) besides Arc et Ciel outside the ramparts, near the main parking lot and the perfume "factories". If you have a car, there are others outside of the town, on the Corniche and up towards La Turbie. In searches, you sometimes see "Eze le village" for the upper village (as opposed to Eze sur Mer).

Arc en Ciel has no availability for our dates, almost no hotels do. I was able to snag a room at Hotel La Villa d'Eze that is refundable so I grabbed it.
