The Mercure is incorporated into the terminal building; the Sheraton is connected to "Schiphol Plaza" area by walkway (as mentioned); the Hilton is also connected by more or less that same walkway but is a few minutes farther out than the Sheraton.

I stayed at the Schipol Sheraton for one night in 2002 before a very early departure back to the US and found it to be very convenient and comfy. It was also quite easy to get to my early flight the next day as it's connected by a short walkway to the main terminal.
