Kaupanger is not a very big place, so personally I'd look for something in Sogndal, depending on your route and schedule.
But I certainly would have planned for an overnight stay at Stalheim hotel the night before the Gudvangen-Kaupanger sailing (departs at 08:00, I guess). And then maybe Kaupanger or Sogndal would be a little early for another stop? Getting further, in the Stryn or Lom or whatever direction perhaps would be a good idea?
