If you want to take the train, enjoy the ride, but why would you have to go to Luton to fly to Zurich? There are low cost flights on BA to Zurich and Basel. One way to Basel is as low as £70 on BA and that's a direct flight. I believe there's one around 9 am and one about 6 pm, something like that. It's very easy to get from Basel to Zurich--although, of course, I think you should stay in Basel ;-)

To Zürich - via London and Paris - on the first night? That sounds pretty ambitious. How about breaking that trip at Paris instead? (I'm shooting in the dark here because I don't know how the PAR-ZRH trip lines up with the Bernina adventure.)
Just a possibility to minimize the wear & tear...

Dukey is i believe a rather Intrepid train traveler - like me per old conversations here. I go to Europe also to see the lay of the land between main cities and not just to see airports. But if that does not turn your handle then of course flying makes sense. I really enjoy every of the 20 or so eurostar trips i've taken as well and the new TGV-Est to Switzerland (if going the Basel route) is really swell as well.

Bernina Express is a great train ride. I did this last year.
As recommended by someone here on Fodor's, Diavolezza is well worth a stop (you can store some small bags (or maybe even bigger ones) in the ticket office) while you ascend. I didn't stop at Alp Gruem, but that also seems very nice. In retropsect we'd have had the time to stop there.
We stayed in St. Mortiz and went to Muttoas Muragl and Piz Corvatsch also. We took Bernina Express from St. Moritz to Tirano and then went on to Varenna (ferry to Bellagio).
