Help with 10 day France, Luxembourg, Belgium, Germany Itinerary

Help with 10 day France, Luxembourg, Belgium, Germany Itinerary

After doing more research and reading previous threads, we've tossed out our previous itinerary and decided on this one. Have rooms booked and finally feeling excited. We gave up a few days in Paris (been there) to see more of Luxembourg and the Moselle River area. Have never been to this area, and would greatly appreciate your thoughts and suggestions.

Seeking advice for restaurants ($-$$$), hiking trails (35-85 years old), must-see attractions/scenery, AND "You have to try one of these..." dishes/drinks/excursions. We will be driving a car and have no children.

Day 1 - Arrive Strasbourg, France (base camp - stay overnight) (lunch/dinner,
walking/sightseeing/shopping)

Day 2 - Arrive Luxembourg City (lunch, walking, sightseeing)
Arrive Vianden, Luxembourg (stay overnight) (castle, river)

Day 3 - Arrive Bouillon, Belgium (stay overnight) (castle, eat chocolate!)

Day 4 - Arrive Mondorf-les-Bains, Luxembourg (stay 2 nights) (spa treatments,
Moselle River cruise?, Schengen? Remich?)

Day 6 - Arrive Nancy, France (lunch, walking, sightseeing)
Arrive Strasbourg (return to base camp/stay overnight - day trips only from this
point forward).

Day 7 - Strasbourg (shopping, walking)

Day 8 - Arrive Offenburg, Germany (lunch, sightseeing)
Arrive Haslach, Germany (sightseeing)
Back to Strasbourg

Day 9 - Arrive Ribeauville, Riquewihr and Colmar, France (visit w/family, lunch/dinner,
wine!)
Back to Strasbourg

Day 10 - Leave Strasbourg/fly home.

Thanks for the suggestion - We might do that! It was on our first itinerary. I plucked the info from "1,000 Places to See Before You Die" by Patricia Schultz.
