The Grand is wonderful. L'Europe is equally good. Great restaurant too.

We loved Amsterdam! We stayed at the simple Hotel Residence le Coin, which we liked a lot for our family of four in two connecting rooms.

Across the street we admired the Hotel L'Europe. Very classy looking. We only walked into the lobby to see it one day. Great location and canal views.

The Hotel Doelan on the same block looked nice from the outside, but it has mixed reviews on Trip Advisor for rooms not being so well-maintained.

The L'Europe is very luxurious and also very expensive and I think you could do better with your money.

As to March weather I agree that it can be cold, windy, DAMP, even rainy, but you know how to dress for such and simply make sure you have the right clothing.

Even at that time of year it might be a good idea to get to the Rijksmuseum early in the day in case for whatever reason there is some sort of crowd. And I also very much agree with booking the Anne Frank House tickets on line in advance; easy to do and saves a lot of bother later.

Utrecht, Delft, Haarlem for daytrips seem reasonable. And give yourself so absolute down time to simply wander around a bit in A-dam or get on one of the trams and simply ride it to the end of the line.
