If you're thinking beyond public trans, I can recommend Norcia for some of the best food in Italy. The Piano Grande area is just beautiful, too.

More beautiful drives: between Bevagna/Bastardo and Spoleto, and between Spoleto and Acquasparta.

Heck, all of Umbria is beautiful.

Did this some years ago to Gubbio and Assisi and others. My memory is that we often had to catch a bus about 7.00 or 7.30 but it was great and it means you are back in Perugia for the evening when in summer the squares are like a drawing room and day trippers gone. Many restaurants to choose from (or there were). There was a fantastic old fashioned theatre being used as a cinema.
