Germany: Wurzburg Kiliani Volksfest: please help with translation

I would like to make a reservation at the beer tent during this festival.

Not having been to this festival, I'm just wondering why the reservations can be made no later than 5 or 6 pm?

Perhaps they are then at capacity, the entertainment starts, so nobody leaves?

Another scenario might be that the 5 or 6 pm just means if you're there, their reservation office closes at that time?

Reservation times: Thurs and Fri by 17:00., Sat to Wed by 18:00.

Why that early? They don't want their tables to remain empty while they have to turn other people away, I guess.

I sent my form in by fax, so I hope to hear a reply next week.

It's still confusing to me why no later reservations.

Perhaps all the later slots are taken.

Later all seats will be taken anyway, every day. If you make a reservation, you just keep others from sitting there and consuming food and beer.
