I read that article in le Temps as well. It was research done at the EPFZ. In fact what it said was drinking black tea helps better than wine... which is why I mentioned the black tea! However while I have experienced dreadful stomach cramps when I once drank cold water with a fondue I have never, ever had a problem drinking wine - and it tastes a whole lot better than tea!!

Raclette: warmed up and poured over bread or potatoes. Seasoning? YES! The Swiss generally put seasoning on it to make it even more delicious.
Fondue: Seasoning: Less so. I use pepper and garlic as my seasoning. However, if you are making it by scratch, you might want to throw some in too.
