You could try Osteria dei Baroncelli, just off Pz della Signoria in a small alley (Via Chiasso dei Baroncelli). They have great regional food, as well as a Bistecca Firoentina which will amaze you. They are usually open daily (as many restauants in Florence close on Monday anyway), but would be worth emailing them via their website to check and then book a table if they are. Other places I was going to recommend are either usually closed on Mondays or I know they don't open during Easter.

I will be in Florence over Easter too and like you am booking restaurants ahead as I am concerned it will be busy. I have reservations for good Friday and Esater Sunday but have left Saturday free, so we can check some places out.

I stayed just north of the Santa Croce area in May last year and found this little restaurant on the corner of Borgo il croce and via mattonaia called "il giova" .
it doesn't look much, but the food was typical but individual, if you know what I mean, and definitely included steak, though not a bistecca firoentina as such.
in fact I liked it so much, and was so interested in the menu, i went there both nights!
there are other very typical restaurants in the area too which is near a theatre and the market.

just looked at the buca lapi website. of course it's nowhere near Santa Croce either, but the reviews are positive.
one warning though - the website says that the portions are 'abbondanti" so you might want to think about sharing if you order a "bistecca alla fiorentina".
