Tough choices.
All just possibilities to consider.
I think kids would enjoy a night in Toledo.
Segovia is a great place for kids, especially the visit to the castle.
Trains are good, but unless you rearranged things to put Granada before Seville, it makes no sense to backtrack from Granada to Seville to catch a train to Barcelona. The current order of your itinerary is very good, so I would fly from Granada to Barcelona. Look for some cheap flights.
Madrid will be hot and Seville even hotter. I would cut 2 nights from Barcelona and 1 from Seville and find a nice villa or hacienda with a pool and AC somewhere near Granada or on the coast for 3 nights. I have driven there, but have no good REC's. The wonderful hacienda I used to stay at gets poor reviews now, but I know there are many available.
It goes against the usual, but with a family of five, after Seville, I might rent a car for a few days for use for the drive to Granada and during a villa stay.

the fastest train ride S- B is 5:35 h....plus you have to get to and from
train stations. There is a luggage security check.>
Yes long train ride especially with kids that age. Either break up in Madrid or fly.

People are making a good point. I think the places you are going will be interesting to children, but you need to plan for the heat and adjust. Andalusia can be scorching hot. I have been there when you simply could not be outside in the afternoon. Cafes and restaurants close. We quickly learned to get any walking done in the morning and hit the museums, nap or be in a pool in the afternoon. We never had dinner before 9:00, and as late as 11:00. Sandwiches and snacks are a must. Of course, lots of water and sunscreen is a given.
In Madrid, your kids might like to row a boat in Retiro Park. It is lovely.
Go to the beach one day in Barcelona.
Get hotels with pools. Plan for the kids. Consider going North instead of South.
San Sebastián perhaps.
