I would shower, change clothes, and go walking around the wonderful streets, taking in the sites, maybe getting lost, finding a wonderful place for lunch, getting my bearings, maybe getting some gelato
and planning my days.

thank you so much to everyone for the replies!! I am so excited to have REAL gelato, Real Espresso, and experience the very best of Europe! if anyone has other suggestions of things they love to do when there that are not usually the norm I'd love to hear about them too!

The Empire Palace Hotel is located in one of Rome's most attractive neighorhoods, which is renowed for its restaurants and nightlife (have you see Fellini's "La Dolce Vita"? - many of the film's scenes play in this neighborhood).
Strolling at night through this neighborhood will give you a tru Italian feeling, IF - and this is a great IF - you will be able to stay awake after 10 p.m. (which is the usual dinner time in Rome).
Very close to your hotel is Via Veneto - the main drag in Fellini's "La Dolce Vita" (a must-see before you leave for Rome) with lots of restaurants. A nightly stroll gives you a good impression of (non-touristy) life of well-off Romans.
There are many good restaurants and wine-bars in the neighborhood. One restaurant we liked was "Il tempio di Bacco" on Via Lombardia, 36,about half a mile from the Empire Palace.
it was one of the most rewarding dinners ever. We entered the restaurant around 10:30 with our family of six. The chef proposed a prix-fixe menu for us with antipasti, pasta, rack of veal, dessert, wine, coffee and limoncello. We agreed, and for a most reasonable price we got one of the most memorable meals of our life with the very best veal ever eaten, a good supply of wine and everything that makes a happy evening.
