Favorite small town w/in 2 hours of Paris?

Pittsburgher thought she had this all nailed down, with a gorgeous gite in Champaigne, but she had difficulty confirming a res w/the owner. And then her beloved husband said "you know, I'd be perfectly happy staying in Paris five nights," since we haven't been there in 6 years. So we regrouped, are now booking an apartment in the 7th for the Paris segment, and will wait on the rest of the country for a few years, when we'll have much more time available.
We're still looking for a day trip from Paris - we've been to Normandy, Versailles and Chartres, but not Giverny. I have a 2004 (really!) post from Fodors recommending Conflans St Honorine as a worthwhile adventure -- any input from those who've been there?

We spent a week in Amboise, but our favorite hotel and meal was La Roseraie in the little town where the beautiful chateau Chenenceau (sp) is. The hotel has a website, gets great reviews, and our lunch was the best food we had in a month in France. Very reasonable, too! It is an hour by TGV from Paris.
