Driving from Barcelona to Granada
Is it a difficult drive from Barcelona to Granada? How many hours does it take? Are the highways similar to those in the US? How far is Valencia from Barcelona and would it be interesting an/or make the trip easier to stay a night or two in Valencia on the way to Granada. Is there much to see in Valencia?

Technically, it is very easy to drive. The motorways are in good shape, and well marked. You'd leave Barcelona south on C-32 and keep going until you hit AP-7.

Moneywise, you will pay quite a bit for motorway way tolls between Barcelona and Valencia (around €30). South of Valencia you can avoid the tolls by using the A-7 instead of the AP-7.
But if you plan to get just from A to B, you might also want to check for budget airfare between Barcelona and Granada.
There is much to see in Valencia, as there is in probably a dozen places in between Barcelona and Granada. Spain does not only consist of a handful of big cities worth exploring

You might take the train to Valencia and rent your car when you leave town to make things easier if there are only two of you.
Valencia to Granada can easily take a day if you like to stop off at small villages.
Otherwise it is no more than 5 hours. Good roads. Valencia to Granada is free if you go on the A7, not the AP 7, towards Alicante/Albacete/Murcia.
