Dolphin Hellas and Fantasy Travel are the two most recommended travel agencies on these forums.
We use Uli at Dolphin Hellas. We have always had the best of service and once she got us a private car to the airport at 4 am during a taxi strike.
Be warned they want you to send a fax copy of your credit card which can be a little disconcerting however these are reputable agencies and this is is standard business practice.

I used Dolphin Hellas for a private tour of Delphi and had an AWFUL experience. We were traveling for 14 days in Turkey and Greece and had many excellent tours, but the one that we had with Dolphin Hellas was horrible. We had booked a full day private tour and our tour guide basically just drove us to the site and told us to walk by ourselves and meet her back at the bus in an hour. Same thing for lunch - she wanted to eat at a place, but did not want us to join her. We could meet her in an hour at the bus. It was an expensive tour and not at all worth what we paid for.

If you scroll down towards the bottom of the page you will see a couple of travel agencies.
You can usually sort out arrangements yourself, if you have the time to research and do bookings etc. But it wouldn't hurt to approach the agency and see what they can offer.
