Couple of options.. Shannon Tunnel or Shannon Ferry.. depends on time and interests.
Listowel http://www.listowel.ie/ and Adare http://www.adarevillage.com/ would be the towns south of the Shannon worth a look for different reasons. Bunratty http://www.bunratty.ie/ jumps out as the main point North of the crossing although Limerick http://www.limerick.ie/ itself has a lot to offer..

When you consider that people say you need 2 days for the Dingle peninsula you would need a week at least for the area between there and Ennis.

There is a link to the Shannon Ferry company in the map and you save a small amount by pre paying.. Make the most of the crossing which although only short if you get out of the car and on the platforms you could see a school of the Shannon Dolphins
