Corfu town with it's fortress, is well worth a visit, as is the Achillio Palace, an interesting villa with gardens a few miles from the town. The north west of the island is beautiful. See

Unless you enjoy noisy bars filled with lager louts, avoid the more built up resorts, particularly Kavos, in the far south of the island.

As I said in a previous post, I wouldn't bother with an organised excursion in Corfu. There's so much to see and do independently in Corfu Town, within a few minute's walk of where the cruise liners moor up.
Just get yourselves into town, wander round the outdoor market, sit and watch the world go by on the Liston, maybe take a ride in a horse-drawn carriage, and, if the sun's not too hot, spend an hour or two exploring the Old Fort.

There was a narrated tour that looked like a train (but was on wheels) that took us from Corfu town, out to some of the slightly outlying sights. I think it was about 3 or 4 Euros, and was a nice break for our feet after walkign around most of the day.

Corfu Town is beautiful and there is plenty to see there. Mid May is a nice time for wandering around the old town as it shouldn't be really hot. If you have more time and want to go further then Paleokastritsa on the west is the must see beauty spot and Kasiopi in the north is a pretty place.
