I see that one of your questions was would your grandparents' air reservation still be good for THEIR return trip without you?

Yes.

Will you have a problem flying back alone at age 17?

No.

I used to have to book flights for kids to fly without adults to get to swim camps, and I also took a child's friend to Europe with us when the child was around 13.

For the last circumstance, while I had documents proving her parents were allowing me to take her, not one person looked at them at any passport check. The people who are on the cruise may need documentation, though, and should check with their cruise line. Royal Caribbean, for example, makes this statement:

"Should the last names of the parent and minor child traveling with them differ, the parent is required to present the child's valid passport and visa (if required) and the child's birth certificate (original, a notarized copy or a certified copy). The name of the parent(s) and the child must be linked through legal documentation.

Adults who are not the parent or Legal Guardian of any minor child traveling with them are required to present the child's valid passport and visa or the child's birth certificate (original, a notarized copy or a certified copy) and an original notarized letter signed by at least one of the child's parents. The notarized letter from the child's parent must authorize the traveling adult to take the child on the specific cruise, must authorize guardian to sign legal documentation/waivers for participation in any activities requiring them (i.e. Rock Climbing, Flowrider, Bungee Trampoline, Inline Skating, or Ice Skating) and must authorize the traveling adult to supervise the child and permit any medical treatment that must be administered to the child. If a non-parent adult is a Legal Guardian, the adult must present a certified certificate of Guardianship with respect to the child."

So the people offering the cruise should make sure they have all required documentation for you.

For booking flights for the kids, the upper end of "unaccompanied minor" status was UP to age 17. After age 14, I no longer made special arrangements with the airlines.

Would I have let my kids (both daughters) at your age do this?

Fly on the plane alone? Yes. Travel alone on the train from Venice? Yes. Go on the cruise? Well, we'd have a long talk about some scenarios there, most specifically, the "just because it's a cruise ship doesn't make it Disney World"
safety lecture.

And by the way, I commend you on being the person asking. Most teens in high school would not think to visit this type of forum.

Just fyi,

My sister and I took an overnight train from Switzerland to Spain when she was 15 and I was 13. We had a sleeper. No problems.
