More from the dictionaries.... <BR> <BR>Everyone refers to the 100 oxen that appear in the festa in Accettura as "buoi" (plural of "bue") in Italian. Most of them are soft pale gray, with sweet faces. They do not look at all like the American bison, but look a little like water buffalo, I guess. A bison (e.g., American bison) is "bisonte." A "buffalo" (wild ox, but not a "bison") is "bufalo" in Italian. <BR> <BR>So, I guess the Accetturese oxen are not used in cheese-making. They really are kept JUST for their use in the traditional ceremonies and festivities (a fact that probably interests only me, but it interests me enough to make up for all of you!).
