Here's where we stand.
We'll be spending time in Romania, right now looking to base ourselves in Sibiu and do day trips on the train to Bran and Sighisoara for day trips as they're two hours ish by train.
Budapest will be our main base. Helsinki will be a quick stop over to satisfy our need for snow if we don't get any in Buda and Romania.
A huge shout to all who have suggestions, all have helped us get to this point and being our itinerary to where it is now.
Any last suggestions on anything. Timeframe weather etc this is all helpful and it's bringing us closer to where we want to be.
Trains though are frustrating. How much is the average train from Budapest to Sibiu, and for day trips from Sibiu to Bran or Sighisoara. Any more info on the rains would be great. The sites are helpful but I'm slightly lost so any personal experience would be great. Do I need to book tickets in advance online or can I get them in Buda? Problem is we want to go to Sibiu for the new year so I'm not sure.

Trains are very cheap in Romania. I did not book from outside the country. May be able to dig out the actual prices from my journal, but it will be later today.

I have looked there. It seems if have to get a ticket to Brasov and just get off at Sibiu.
I was just hoping for anyone who's done the train trip and can say it's about so much so I have a rough idea of what sort of budget to plan for.

Seems you didn't read it very carefully, or not enough of it. If you look at the schedule at bahn.de, which I feel sure seat61 points you to at some point, you will see that the night train from Budapest stops at Sibiu, and if you look at the other trains you will see that that is the one you want.
Also, seat61 gives you the price, and tells you how to book a ticket. What more do you want?
I have not ridden that specific train, so my notes (hand written, not online, when it comes to train fares) will not help you, although as an indication of the cheapness of travel in Romania, I can tell you that Bucharest to Brasov was 50.50 RON (11.65 USD at today's exchange rate) and Brasov to Sibiu was 46 RON.
